This article is the basis for my claim, "the steer (cow) we want to eat is the steer (cow) with the highest content of stearic acid. That's the steer (cow) that is grass fed, not grain fed. Stearic acid doesn't elevate cholesterol like palmitic and myristic acids, the predominant fats from grain fed steer (cows.)"
